Easy Cheeseburger Casserole


EASY CHEESEBURGER CASSEROLE 

This Easy Cheeseburger Casserole recipe is the perfect quick weeknight dinner for your family! With easy ingredients like beef, onions, tomatoes, garlic, and spices - you'll never settle for another box of hamburger helper again! 

INGREDIENTS

  • 1 lb lean ground beef
  • medium onion diced finely
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 15 oz can petite diced tomatoes
  • cups water
  • 3 cubes beef bouillon 
  • 2 cups large elbow macaroni dried
  • 1 cup sour cream
  • 1/4 cup whole milk
  • 1.5 cups mozzarella cheese shredded
  • 1.5 cups cheddar cheese shredded
  • 1 tbsp parsley dried

INSTRUCTIONS

  • In a medium bowl, add water and bouillon cubes. Microwave on high for 4 minutes, or until the beef bouillon cubes are dissolved. Set aside. 
  • In a large skillet, cook ground beef over medium high heat until no longer pink. Drain grease and return beef to pan. 
  • Turn heat down to medium and add onion, salt, pepper, minced garlic, Italian seasonings, garlic powder, and chili powder. Stir well and let cook until onions are soft and translucent, about 5-7 minutes. 
  • Add Worcestershire sauce, tomato paste, and diced tomatoes (still in their juices) and stir together. 
  • Next, add the dried large elbow macaroni and beef bouillon broth to the beef mixture and stir together. 
  • Cover and let simmer over medium-low for 5 minutes. Uncover and stir. Cover again and let simmer for another 5 minutes, or until pasta is tender and done. 
  • Uncover mixture and stir in sour cream and milk. 
  • Pour ½ of the beef and pasta mixture into a 9x13 glass baking dish. Sprinkle ½ of the mozzarella and 1/2 cheddar cheese over the casserole.
  • Pour the remaining beef and pasta mixture over the top of the cheese. Sprinkle with remaining cheese.
  • Bake uncovered at 400 degrees for 10 minutes, or until the sides of the casserole are bubbling.

Air Fryer Cinnamon Bread Recipe

Air Fryer, Cinnamon Walnut Pound Cake

This is a really easy breakfast. I usually make these the night before, so that I can wake up, pour a cup of coffee, and cut myself a nice thick slicer, and sti down and ready my emails.

Please note: The pan here really makes a difference, if you are new to making quick breads in the air fryer, please INVEST in mini pans.

Ingredients

Batter:

  • 3 cups flour
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cup Greek yogurt
  • 1 tablespoon vanilla extract
  • 3 eggs
  • 1 1/4 cup sugar
  • 3/4 cup butter

Topping:

  • 3/4 cup sugar
  • 1 tablespoon ground cinnamon
  • 1 cup ground walnuts

Instructions

  1. In a large mixing bowl, mix together the flour, baking soda, baking powder, salt.
  2. Then mix in the Greek yogurt, vanilla, eggs, sugar, and butter.
  3. Mix well.
  4. Pour the batter into a greased air fryer safe pan.
  5. In a small mixing bowl, combine the topping ingredients, and then sprinkle on top of the batter
  6. Set the pan into the air fryer, and set the temperature to 320 degrees F, for 20 minutes.
  7. When the time is up, place a toothpick in the pound cake, and check to see that the toothpick comes out clean, if not add another 5 minutes.
  8. Plate, serve, and enjoy!

Notes

Note: Depending on your air fryer and the pan you use. I highly recommend that you purchase mini-loaf pans as they are better at cooking the entire quick bread.

Note; This will make 3 loaves.

Still Sheltering

Well here we are 3 months later...still sheltering in place. Still wearing masks when needing to go out. Still not seeing each other. Still no dinners out. Crazy end to the school year.  Still working from home. 

This all seems so crazy for most people. We’re home all of the time and rarely do many things, so it has not been very hard for us. Some people are used to being on the go constantly.  I imagine it's been pretty hard if you're an on the go girl! But, it's all about protecting ourselves AND each other, we can do it!

For now, stay home when you can, wear a mask if you're out and about, and do practice social distancing when necessary. It may not matter to you, but it may very well matter to the person next to you. Be thoughtful of others, not just worried about your own comfort. 

Hopefully things will start to calm down a bit, I honestly don't see that happening very soon, sadly. But we will all be together again sharing laughter, love and great times 💗

Sleep Habits

Do you have trouble falling asleep at night? Do you wake up and have trouble going back to sleep?
There are many reasons why people have trouble sleeping. Try keeping a sleep journal if you're having "off" sleep patterns. Sometimes it's the most minor thing that has us struggling. 

  • Obvious one, don't drink a lot of fluids after about 7pm
  • Be mindful of caffeine or sugar in the things you snack on at night
  • Don't go to bed too early, and avoid napping during the day
  • Don't over eat at dinner
  • Try reading something calming before bed
  • Take a warm bath or shower
  • Have a glass of milk
  • Put your electronics away an hour before bed time

If you wake up in the middle of the night try to avoid drinking cold water. That's my thing. I wake up and the first thing I do is go to the fridge for a glass of ice water. For one, you'll have to get up again to pee, and cold water wakes you up. 

Try your best to avoid any sleep aids if at all possible. These can have a really bad effect on you, and can leave you feeling like you have a sleeping pill "hang over". Unless you have a good natural sleep aid, then by all means use it!
